Turkey Sausage Stuffed Chicken Roulades on top of a bed a wilted kale!
This is leftovers from last night since I didn’t get to eat mine. Noms. So good. There is one more left in my fridge. I wonder who is going to get it…haha.
Ate 1/2 of one of my avocado muffins too. Will eat the other half with some pork tonight for dinner before practice. :D
I love good food.

My lunch! Fajita Salad Bowl. Decided to get creative instead of studying. ahah.
Cooked some Mexican Style Cauliflower Rice, cooked some steak, and made some homemade guacamole.
Lined the bowl with spinach, topped with “rice” topped with steak, and then topped with guacamole, red onions, lettuce, and dollop of sour cream. Wish I had some black olives. mmm. That would have made it perfect. I have leftovers for tomorrow! :D

As promised here is a beautiful picture of my Avocado Bread Muffin!
For 6 large muffins:
1 muffin: Calories: 267; Carbs 15g; Fat 20g; Protein 11

6 eggs
2 avocados
1/2 cup coconut flour
1/2 cup ground flax seed
1/2 teaspoon salt
1/2 teaspoon baking powder
Combine dry ingredients, then add in wet ingredients. Make sure its smooth - no lumps. I used a mixer. Grease the pan pretty well.
You can put it in a loaf pan for 350 degrees for 45-50 minutes. I used a 6 muffin tin container for 350 degrees for 20 minutes.
I added cinnamon, allspice, and nutmeg to it. Definitely could have added more to make it more sweet. Or add some coconut sugar. Next round! Might even chop up some nuts too.
Let me tell you. These suckers are pretty hefty/dense. I ate one post workout with a single serving packet of Artisana’s Macadamia Nut Butter and it was amazing. I should have actually spread the nut butter on the muffin, but I was running out of work and couldn’t. But its so good guys.
Also good warm with a bit of butter on it and make it a dinner roll. :D

they are so dense. Like I had a few bites and they are pretty darn filling. :D

Kinda bland - need to work on seasonings and maybe adding some nuts? But I like bland flavoring.

Noms today was full of deliciousness. :D

4:15am: Bulletproof Coffee

10:00am: 3 egg fritata with mushrooms, bell peppers, spinach

3ish: small handful of baby carrots and a small handful of macadamia nuts

7:00pm: Skillet Braised Salmon with Cauliflower Kale Spinach and Broccoli

Holy Good Moly. Dinner was delicious and it took probably 30 minutes with prep and cooking. And I have leftovers for another day! I think I might pack some with my chicken for dinner at school tomorrow but I’m not sure if I’m gonna enjoy it cold. :/ decisions.

Actually I packed some of my leftover cauliflower rice and cut up a few mushrooms to have with my chicken tomorrow.

That picture of my stomach was when I was laying out catching some sun today. If only it really looked like that when I stood up. ahha. Oh gravity you are a doubled edge sword. Some day soon though it shall look like that all the time! Gotta take it day by day! I’m not sucking it in either just letting it chill. My hip bones are huge. lol.

Okay. Off to go watch the documentary, Food Inc. with my madre while I eat some leftover avocado pudding.

I realize I’m super low on carbs today. Almost a whole week without legumes or grains and mostly dairy. :D

Chocolate Avocado Pudding!
Halved the recipe to make it a single serving. So delicious. Hit the spot and wasn’t overly sweet since I used dark cocoa powder. :D I love that bitter chocolate taste.
I’m addicted. I always like a little something sweet after dinner. Totally would have had the whole recipe but I feel like 1 full avocado is too much? What do you guys think?

I’m addicted. I always like a little something sweet after dinner. Totally would have had the whole recipe but I feel like 1 full avocado is too much? What do you guys think?

Mmmm mmm. I can get used to Paleo! All of this was Paleo approved. Forgot to put cheese on it, which was what I was planning on having since it fits under the Primal guidelines. Oh well. Still so good. Might have it again tomorrow for dinner! It was filling, but not that over stuffed feeling. :D

topped 1 egg with siracha sauce
homemade sweet potato fries.
Its weird eating like this. For example in the pan with the eggs instead of using cooking spray I had to use real butter which I haven’t used since I was little.
But I like the change.
Kind of got bread cravings today since I usually have a pb&banana sandwich everyday.
But change is good!
Everything today was Paleo except my Fage 0% yogurt for breakfast and my unsweetened chocolate almond milk in my smoothie since I’m trying to get rid of all my food and not waste it. I think I have 4 more yogurt cups before I replace it with regular yogurt.

My bomb ass lunch. Okay it was split up by like an hour. I am in the biggest mood to saute my veggies!

Decided to cut up a zucchini and season it with pepper and saute it and after awhile a threw in some mushrooms. This is half of what it made. I put the other half away for dinner. Noms so good. Next time I’ll cut up the zucchini even thinner so it cooks more water out. But dear lord its amazing. The smell the mushrooms make when they are cooking. So good. I don’t add anything to the pan. I just sweat out the veggies. I think tomorrow with my eggs I’m just gonna put the veggies on the side with the eggs and just saute the onions, bell peppers, mushrooms, and even zucchini! :D

Ate it with 4 ounces of rotisserie chicken. [4+]

I have been craving a smoothie for forever so I finally had enough time to make one and didn’t eat any fruit really today so I got my fruit in this way.

Chocolate Flax Banana Berry Smoothie

  • 1 cup Almond Breeze Unsweetened Chocolate Almond Milk [1+]
  • 3 ounces of Fage 0% Plain Nonfat Greek yogurt [1+]
  • 1 small-medium banana
  • 1 cup of frozen berries [mine was a blackberry, raspberry, blueberry combo]
  • dark cocoa powder
  • 1 and 1/3 serving of Cold Milled Flax Seed [2+]
  • 4-5 ice cubes to make it thicker

Mix all the ingredients together. I didn’t measure the dark cocoa powder I just put a bit in. It was definitely less than 1 tablespoon. Probably  between 1-2 teaspoons.

Super good and it gives you your chocolate fix.

Okay. I am getting off tumblr. I have 5 hours or so to get my art essay prompts finished before I go to the movies. kjsdfhdskhfdksjfhdksfh.

Update for the past few days since I’ve been so hectic. This is me post run at work on Tuesday waiting for my oatmeal to heat up before I drove over to school.

It kicked my butt. I ended up just running 15 minutes and going 1.62 miles and today I made myself run 20 minutes and went 2.2 miles. Woohoo! The last 10 minutes I varied up the incline a bit to help build up my endurance. Forgot my HRM at home though so I didn’t get a cal count. Oh well.

Last night for dinner I made that healthy Crunchwrap Supreme that I posted about the other night.

Added a extra bit of chicken and avocado because I needed points, and so it didn’t close all the way when I tried cooking it.

BUT OH MY GOD GUYS IT TASTED JUST LIKE A CRUNCHWRAP SUPREME FROM TACO BELL! AND ONLY 7 POINTS. THATS RIGHT. 7 POINTS. Mine ended up being 10 with the 2 ounces of chicken and avocado.

NOMS. making it again asap!


Anyway I had a minor internal freakout yesterday which I will post about later tonight when I get home from school because I don’t feel like writing about it now. :/

All I know is I constantly am doing homework and I can never get ahead I swear.  I have a huge ethics midterm tuesday for my criminal justice class. And this is a good portion of my night looked like last night creating these puppies:

Not to mention I read and typed up my notes for a huge chapter in my oceanography class. You would think an upper division general ed class would be chill. NOT. haha.

Anyhoo. My longer run made me run late so I didn’t shower. aha. And I forgot my deodorant. Thank god I don’t smell when I sweat. I just feel gnarly. I at least had time to wash my face.

4 hour break today between my classes since my middle class cancelled today. Get to work on my oceanography research paper instead.

Good run overall today. Made me super sleepy though

Ummm. 7 point Crunchwrap Supreme?!

Holy sweet moly. What have I just discovered. I think I will be making this Wednesday night since I don’t have practice or anything and I’m actually home for once. :D
